How do you wash and preserve your vegetables?
Although our products are organic, it is always important to pay attention to the cleanliness of the vegetables.
You should always wash them to avoid a few “surprises” and some visitors who are only tasty cooked (smile). Even though they are washed before being placed in the basket, it is very likely that a snail will cling to the vegetable with tooth and nail...
There can also often be some debris (dust, sand) that didn't disappear during the first wash on the farm. That's why it's crucial that, with some vegetables, you wash them with running water, especially the leafy ones, for a period of 20 to 30 seconds.
Some vegetables should be washed and prepared before putting them in the fridge, especially those that are more perishable and need special care to keep them fresh for longer than expected. We therefore recommend that you store vegetables in the following ways:
- Lettuce: Wash well with water, sort into leaves, remove excess water and place in a container (Tupperware) with a damp cloth or kitchen paper on top.
- Cabbage: Wash the cabbage and store it whole in your fridge. The outer leaves should not be removed, as they help keep the cabbage fresh for longer.
- Aromatics, rocket, mizuna: If they're really dirty, wash and dry them before putting them in the fridge, otherwise only when you use them. Put the stalks in a jar of water.
- Leafy vegetables (wild spinach and chard): Clean them before putting them in the fridge, let the leaves dry and put them back in the fridge whole. To make them last longer, wrap them in kitchen paper or a cloth.
- Squash, potatoes and onions: Keep these vegetables in a cool, well-ventilated area with little light. Put a cloth or bag over these vegetables and leave them in this condition; they can last for several months.
- Tomatoes, eggplants and peppers: There is no need to wash them before placing them in the fridge.
